Rice Pilaf with Tomatoes
Ingredients:
1 cup whole grain rice
1 vegetable bouillon cube, dissolved in a cup of water to make a vegetable stock
3 slices of bacon, chopped
1 tbsp olive oil
1/2 onion, chopped
3 button mushrooms, sliced
1 cup spinach
1 tomato, chopped
1 tbsp dried parsley
1 tsp Cajun seasoning
1/2 tsp Lemon Pepper
Salt, to taste
Water, as needed
Directions:
1. Cook rice according to package.
2. In a skillet, heat oil and pan fry chopped bacon. Spoon out onto a paper towel and set aside.
3. In the same skillet with all the bacon juices, brown your onions. Then, cook your spinach and mushrooms.
4. Stir in vegetable stock and bring mixture to a simmer. Cover and cook until liquid is reduced.
4. Add bacon and cooked rice into skillet. Mix well.
5. Add tomatoes and spices.
Serve with fresh, sliced tomatoes & enjoy!
Of course, both white rice and whole grain rice each have their pros and cons depending on what dish they're used in. In this dish in particular, the whole grain rice really makes this dish work because of its nutty and chewy texture.
But...my favorite way to eat rice of all time? SUSHI. (Making sushi is definitely on my to-do list in the future!)
