(Formula based on No Meat Athlete's Ultimate Energy Bar Formula)
Ingredients:
1 1/2 cups white nectarine (~2 medium nectarines)
1/2 cup almond butter
1/2 large banana, mashed
1 tsp cinnamon
1/4 tsp sea salt
1 1/2 cup oats
3/4 cup protein powder
1/4 cup cocoa powder
2/3 cup unsweetened coconut flakes
1/3 cup raisins
1/4 cup honey, agave nectar, or sweetener of choice (optional)*
Directions:
1.) Mix all the ingredients together in a big bowl.
2.) Blend in a food processor.
3.) Scoop mixture onto a baking sheet lined with parchment paper.
4.) Spray oil onto another baking sheet and push down onto your mixture. (Or you can spray you hand and use that instead!)
5.) Once it is spread evenly on the baking sheet, bake for 15-18 minutes at 350F.
Cool, cut & enjoy! :)
As you can see above, it doesn't have to be cut perfectly as long as it's perfect for transporting around throughout the day and it tastes great! :D
