Creamy Strawberry Cashew Dressing

Hello all~! 

I hope the month of June has been treating you all very well, blasting you with lots of happiness and success! This past week I have been postponing groceries for the longest time everrrrr. Now, the only things in my fridge are milk, 1/4th of a watermelon, a gazillion condiments, strawberries, spring salad mix, tiny little tangerines, and lemons. In my pantry, I have nuts...more nuts...and raisins.

Yeahhhh....I best make a trip to the grocery store tomorrow or die of starvation... *O*

BUT EVEN WITH MY LIMITED AMOUNT OF INGREDIENTS...I was able to create a pretty awesome salad dressing!!! YAASSS.

Happy Wednesday!

I hope the week is going swell! I've been doing too much dilly dallying the past week, but that's definitely stopping now since summer school has started. A sad sad thing because my vacation is over-ish. But also, a joyous thing because now I have a set schedule to follow...and I won't procrastinate my life away! :) I like schedules because they keep me motivated and on track with my goals. Sorry for the slow posting all of a sudden! I've been busy getting accustomed to school again and volunteering with a wonderful dietitian.


Without further delay, today's recipe was taught to me by my mom and grandma. This is one of my favorite childhood dishes. I love how the sugar, tomato, and egg just mingle so well in this simple, easy-to-make dish. Tomatoes are delicious and packed full with vitamins like A and C. It's also low in calories and high in antioxidants. The egg is great for creating texture and The sugar is important for decreasing the acidic flavor of the tomato. If you like ketchup and eggs, you'll love this recipe! Some of my other favorite dishes are bean sprout omelets, century egg omelets, pork bone soup, century egg jook with Chinese doughnuts, and more! I'm slowly learning how to make them all from my mom and grandma and when I do, I'll be glad to share them all with you guys here! :)

Strawberry Coconut Oatmeal Cookies

Hello everyone!

I hope each one of you had an amazing day as I post this during midnight hours. I've been postponing this post because I was...without shame...TOO BUSY PLAYING AROUND AND ENJOYING THIS AMAZING BAY AREA CALIFORNIA WEATHER!!! ^____^

Summary of the past week in a nut shell: I went to SF, ate an amazing Bahn Mi sandwich, watched Maleficent, ate jackfruit curry, watched a Bollywood movie, baked cinnamon rolls, scored a volunteership with an awesome dietitian (who also teaches at UCB!), did some yoga, and attended LIVE 105 BFD 2014! Overall, a wonderful, fun-filled, and relaxing week! I can't wait to learn how to make my own Banh Mi and jackfruit curry one day. BFD WAS EPIC! I saw Cherub, Phantogram, MIA, Giraffage, Flosstradamus, and more! Perfect concert to start off the summer~ :) I'll post pictures at the end of this post!
