Pesto Veggie Scramble
Ingredients:
Olive oil
1/4 onion, chopped
2 cups spinach
2 eggs
3 button mushrooms, sliced
1 oz pesto
Italian seasoning, to preference
Directions:
1. Heat oil in a pan and brown onion.
2. Cook spinach and mushrooms until it looks cooked halfway. Add eggs.
3. When eggs look cooked, add pesto and italian seasoning
Tada~! You are done and it will probably only take you 5 minutes to make this easy dish.
Now, serve this awesome & tasty scramble in a sandwich, burrito, taco, pita bread, or whatever your heart desires!
This dish is awesome b/c it's so versatile! You can substitute any veggie you want or serve it with any medium you want.
I have to eat this with my beloved rooster sauce, Sriracha!
