Ingredients:
1 Butternut squash
1/2 cup marinara tomato sauce
1/2 cup couscous, cooked
3 button mushrooms, sliced
Italian seasoning
Cayenne Pepper
Pinches of Salt (here and there)
1 cup shredded cheese of choice
Directions:
1. Roast squash at 375 F for ~60 mins (roll it over to the other side after 30 mins) or until soft on a lightly oiled baking sheet.
2. When cool, cut down the middle. Throw away seeds and spoon out the squash meat. (*Save the squash meat to use for THIS RECIPE!!!)
3. Lightly cover both halves with tomato sauce.
4. Layer on couscous, then sliced mushrooms, then spices & salt, then handfuls of cheese.
5. Stick squash back into oven and bake for another 30-40 minutes.
Cool and serve!
These are healthy pizzas no one can resist. I love this recipe because you add whatever favorite pizza topping you want on to it and you get a new pizza every time!
