Pumpkin Greek Yogurt Pancakes with Pumpkin Spiced Icing

If I had to endure the stress and repetitive boring cycle of study study test test mumbo jumbo associated with school any longer, I would have flipped some trees. ಠ_ಠ;;

Thinking positively now, SUMMER IS HERE ONCE AGAIN && TIME FOR MORE FUN IN THE SUN. <3 <3 <3 <3 <3 (✿ ♥‿♥) No more hermitting away at Starbucks && missing out on that free vitamin D for me~!!~!~!

To celebrate the end of finals & the start of my next month of summer vacation, I decided to congratulate myself with a batch of Pumpkin Greek Yogurt Pancakes with Pumpkin Spiced Icing!

I’m so proud at how these came out! They’re super quick & easy to make and what’s even better is that I made them with wholesome, good-for-you ingredients that contribute to a protein & fiber packed meal! Brighten up your morning with this simple & delish dish! :D One bite & you’ll be googly-eyed for pumpkins. ;)

I also had fun with my pancakes by artistically creating attempting little bear shapes! WELL, they look pretty aight to me. The IMPORTANT PART was that I was having my funsies~~ (♥‿♥ ) 


Pumpkin Greek Yogurt Pancakes with Pumpkin Spiced Icing

Thick and fluffy beautiful pumpkin pancakes~



Prep time: 3 minutes

Cook time: 10 minutes

Pancake Ingredients:
1/3 cup whole wheat flour
Dash of baking soda
Sprinkle of salt
½ tsp ground cinnamon
Dash of ground ginger
Dash of ground nutmeg
Dash of allspice
1/6 cup pumpkin puree*
1/6 cup greek yogurt, plain*
1 egg**
3 tbsp milk
1 tbsp honey
½ tsp vanilla extract


Icing Ingredients:
1/2 tbsp unsalted butter, room temperature
~¼ cup powdered sugar***
~1 tsp milk***
½ tsp ground cinnamon
Dash of ground ginger
Dash of ground nutmeg
Dash of ground allspice


Directions:
1. Mix all the dry pancake ingredients into one bowl (from w.w. flour to ground allspice). 
2. Mix all the wet pancake ingredients into another bowl (from pumpkin puree to vanilla extract). 
3. When each is well mixed, mix the dry & wet together, but do not over mix. It should have a thick consistency, but liquid enough to be pourable. If it is too thick, add more milk. 
4. In a third bowl, mix all the all the icing ingredients together. Set aside.
5. Heat a nonstick skillet on medium-low heat. Lightly coat skillet with oil or butter.
6. Pour in batter into whatever shape you like. Cook until bubbles form on the surface of the pancake and it is golden brown on the bottom. Flip and cook until golden brown on the other side. (I used a tablespoon to help me shape my bear face. 4 tablespoons for the head and 1 tablespoon each for the ears.)
7. Drizzle icing on top of pancakes & serve! (You could also just drizzle your pancakes with honey && it would taste just as amazing!)

Makes 1 serving (~4 pancakes) [ALL FOR ME~~~!! MUAHAHA. But dw...this recipe can easily be doubled, tripled, quadrupled, etc etc etc. && if you're nice to me, I might just be your personal chef for the day. ;)]



Side notes:
*I just used a 1/3 measuring cup and filled one half with puree and one half with yogurt.
**Every other additional serving, add an egg. In other words, 1-2 servings = 1 egg, 3-4 servings = use 2 eggs, 5-6 servings = 3 eggs, and so on.
***If the icing still feels thick, add a little bit more milk until you get the consistency you like. Even if it feels thick after adding the milk, keep stirring until all the powdered sugar is dissolved. It’s easy to accidentally add too much milk in the beginning. If you’ve accidentally added too much milk, add more powdered sugar.
