It's been quite some time since my last post. I hope you all have been having an adventurous and relaxing summer!

So, where have I been???

Before I get started, I need to drop down some quick dietetics background for my non-dietetics folks. Here are the steps I am taking to become a registered dietitian nutritionist (RDN):


In terms of my path to becoming an RDN, I completed my DI a few weeks ago (WOOHOO!!!). DI programs can differ in many ways. My program entailed 8 weeks food service nutrition, 8 weeks community nutrition, 8 weeks inpatient clinical nutrition and 6 weeks elective. During my clinical rotation, I disappeared from blogging because I was commuting 2.5-3 hour round trip each day (Bay Area <—> Central Valley) and did not have time to blog. :(

In my last post, I was starting my 8-week inpatient clinical rotation of my DI. I stated how much fun I was having in being a nutrition detective in the hospital. Daily tasks involved screening patients, reviewing medical charts, talking with other healthcare providers and providing patient education. I also completed two case studies, which I had to present one of them (note: it was nerve-wracking)! My clinical site also specialized in bariatric (weight loss) surgeries, so I learned about the different types of surgeries and bariatric meal planning. Overall, it was a great experience because I had the opportunity to shadow eight RDNs, which was awesome because each person had their own unique tips & tricks that they passed on to me.

For my 6-week elective rotation, I shadowed RDNs in an outpatient setting and it ended up being my favorite rotation. Why? Because I got to talk to people about food all day! Of course, the patients and I also talked about their health goals and what they could do to put them closer to their goals. Now, I’m studying for my RDN exam and, luckily, I don’t have any other priorities besides studying. Wish me luck! :P

Spicy Chicken Feet Salad

My latest recipe features a common delicacy in Asian cuisines, chicken feet. When I first tried this version of chicken feet made by Mario’s mom, I couldn't get enough of it! To me, it's a spicier version of the dim sum dish, 白云鸡脚 (or “bot wun gey geuk” in Cantonese). Sweet, sour, spicy, gelatinous goodness...this dish will make your taste buds think. My favorite part is the texture. :)

Also, please don't be intimidated by chicken feet! If you’ve never tried it before, I recommend going to your local dim sum restaurant and trying chicken feet (凤爪 “fung jaau” (red version, left) or 白云鸡脚 “bot wun gey geuk” (white version, right) in Cantonese).

Prep time: 10 minutes Cook time: Total time: Servings: 6 Serving Size: about 2.5 ounces
Ingredients
  • 1 pound chicken feet (the outer skin layer should already be peeled off when you buy it at the store)
  • 1 bunch Thai basil, destemmed
  • 5 small lemons, juiced
  • 1 bunch cilantro, destemmed
  • 6 serrano peppers, sliced
  • 1 small purple onion, sliced
  • 1 tablespoon vegetable or chicken boullion
  • Sugar and salt to taste (I used about a teaspoon each.)
  • Fish sauce to taste (I used about a teaspoon.)
Instructions
1. Cut nails off chicken feet. (Optional: You can also cut the chicken feet in half.) 2. In boiling water, boil chicken feet for 10 minutes to clean it. Drain. 3. In another pot of boiling water, boil chicken feet for 20 minutes. Drain and rinse in cold water. 4. Mix chicken feet with all the other ingredients and taste it! Chill in the fridge overnight for maximum flavor.
