Vegan Coconut Brandy Cereal Ice Cream

Happy Hump Day my friends!

If you're searching for a quick little pick-me-up at this midpoint of the week, you're in luck! Inspired by Humphry Slocombe’s Secret Breakfast, a to-die-for merriment of bourbon, cornflakes, and vanilla ice cream, I created a vegan version with minimal ingredients for the heck of it because why not? (Not that these were the only ingredients I had in my house...) I promise you, this recipe will be easy (the fridge will be working the hardest), healthy (chock-full of good-for-you nutrients), and intoxicatingly delicious (you'll go bananas for it)!

Vegan Coconut Brandy Cereal Ice Cream
(Inspired by Humphry Slocombe’s Secret Breakfast)

Level: Easy

Prep time: 5 minutes
Cool time: 2 hours
Total time: 2 hours 5 minutes

Servings: 4

Ingredients:
- 1 (15 oz) can coconut milk
- 4 large frozen, peeled very ripe bananas
- 2-3 tablespoons brandy or bourbon*
- 2 teaspoons of vanilla extract
- 3 cups Cinnamon Toast Crunch cereal (or favorite crunchy cereal)

*Pro tip: Add alcohol slowly because too much will lead to bitter ice cream and a miserable you.

Directions:
1. Add the first 4 ingredients into a blender and blend well.
2. Pulse in the cereal about 3-5 times. We’re looking for chunky cereal pieces!
3. Stick mixture in freezer for about two hours or until sturdy.
4. Scoop into a bowl and dive in!

The original at Humphry Slocombe is still my all-time favorite (& if I had it my way, I would eat it for breakfast, lunch, and dinner), but for those days that I can't make it to SF and grab a scoop, this recipe happily satisfies my craving.
